I have a " base" muffin recipe that I use and then I vary the flavorings I put in the base.
The thing that makes this so easy is we are not creaming butter and sugar, so you do not need a mixer!! I always have the ingredients for the " base recipe" on hand in my pantry so I can throw these together pronto!!
The oil produces a moist muffin that will keep for several days on the counter or freeze very well.
This recipe comes together in less than 10 minutes. YAYYY!
Preheat oven to 400 degrees
Grease muffin pan or use liners or free standing baking cups
Ingredients
Base muffin recipe (12 muffins)
Dry ingredients for base muffin recipe
2 cups AP flour
3/4 cup white sugar
3 teaspoons baking powder
1/4 teaspoon salt
In a large bowl mix together dry ingredients
Wet ingredients for base muffin recipe
1 large egg beaten with a fork
1 cup milk
1/3 cup vegetable oil
1/3 cup sour cream or greek yogurt
1 teaspoon vanilla
Mix wet ingredients together and add to dry, only mix until just combined
Apple Spice Variation
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 cups shredded apples ( I wash the apples but do not remove the skins) you can use any variety of firm crisp apples you have on hand.
1/2 cup chopped walnuts-can be omitted
1/2 cup raisins-can be omitted
Add apple spice ingredients to the mixture and using a scoop, scoop into muffin tin, liners or baking cups
Crunchy sugar topping
2 Tablespoons of brown sugar
2 Tablespoons of Raw Sugar (the kind with the big crystals)
mix the sugars together.
Sprinkle each muffin with Crunchy sugar topping.
Bake for the first 5 minutes at 400 degrees (this helps them get a quick rise) on the middle rack of your oven.
Turn down the oven to 350 degrees for the rest of the bake time.
Test with a toothpick a t 20 minutes to ensure muffins are completely baked,if not bake for 5 more minutes and test again.
Let cool for 15 minutes before eating.
They won't last long....
